In a world where the global population will reach 9 billion people by 2050, the food sustainability becomes an urgent challenge, which is why the consumption of local foods plays a key role, said the Food and Agriculture Organization of the United Nations.
In commemorating this June 18 the Sustainable Gastronomy Daythe FAO noted that, today, one third of the food produced is lost or wasted, while the unsustainable exploitation of oceans, forests and soils puts our natural resources at risk.
"As producers we need to be more careful with the use of our natural resources, and as consumers we need to be more meticulous in our food choices," the agency said.
In this context, he indicated that consuming local products contributes to boosting the economy of an area, helps its farmers and reduces greenhouse gases and resources used in food transportation.
"Buying local products helps increase their demand and this helps farmers sustain their livelihoods," he said.
The benefits of consuming local
In addition to the economic benefit to the community, consuming locally produced food contributes to preserving the culinary roots, recipes and traditional cultures of the people.
Choosing locally grown and seasonal foods also changes the buying habits of local businesses such as restaurants and hotels, and supports local fishermen and farmers.
FAO stresses that many of the culinary traditions are sustainable by nature and connect us to our ancestral roots. Cooking with local and regional ingredients, such as legumes, which are easy to grow and very nutritious, is one way to practice this sustainability.
"One of the pillars of sustainable gastronomy is supporting local production. Buying food from local producers not only reduces the carbon footprint associated with transportation. It also boosts local economies and ensures the freshness and quality of the products," said Guillermina García, of The Food Tech.
FAO said that at a time of rising rates of overweight and obesity and persistent vitamin and mineral deficiencies around the world, it is crucial to ensure that healthy diets are accessible and affordable for all.
He stressed that, more than a fad, consuming local products is an imperative need for a sustainable future and everyone can be part of the change through their daily food choices.
